Grilled Salmon with Swiss Chard & Capers Recipe

Easy Grilled Salmon RecipeSalmon contains omega-3 oils to fight heart disease and smooth the appearance of skin. It also contains calcium, magnesium, protein and B-vitamins. Nutritionists say you should have salmon once or twice a week. Try this recipe on for (a smaller) size.

Grilled Salmon with Swiss Chard & Capers Recipe

Prepared in 15 minutes or less.

Ingredients:

  • 2 4-oz Wild Alaskan salmon fillets
  • Salt and pepper to taste
  • 1 tsp fresh squeezed lemon juice
  • 1 Tbs olive oil

Swiss Chard BundleFor the Swiss Chard:

  • Pot of Water
  • 6 leaves Swiss Chard
  • Salt to taste
  • 6 capers
  • Fresh squeezed lemon juice to taste
  • Olive oil to taste and a bundle of fresh chives

Preparation:

  • Preheat barbecue to 425°F or preheat a grill pan on a stove top on medium-high.
  • Season salmon with salt and fresh ground pepper.  Grill until medium well, about 6-7 minutes.  Remove from heat and allow to rest.
  • In a blender, emulsify lemon juice and olive oil.  Set aside.
  • Fill a medium pot with water and bring to a boil.  Steam Swiss chard over top or add directly to the water and boil for 1 minute only.
  • Drain Swiss Chard and dress with a pinch of salt, capers, fresh lemon juice and oil.
  • Arrange salmon fillets on individual plates, season with emulsified lemon juice and olive oil from blender. Serve salmon atop steamed Swiss chard and garnish with 2 fresh chive stems.
